			<content:encoded><![CDATA[<p></p><p>Did you know that the first vegetarian recipe book was published in 1690?  Or that the 19th Century saw not only a growth in the vegetarian movement, but also the publication of increasing numbers of vegetarian cookery books?</p>
<p>The recipe for Turnip Tops and Nettles on Toast appeared in a book called “Vegetarian Cookery by a Lady”, published by Fred Pitman of London in 1866.   Fans of the current fashion for ‘wild’ food may wish to give this recipe a try, but the less adventurous could still find plenty of things to tempt them in the book, like Onion and Sage Fritters or Baked Vegetable Marrow.</p>
<p>These were tough times for vegetarians though, facing scorn, and a general population with a dislike of vegetables!  There was also very little choice of ingredients available and some of the recipes contain cooking methods impossible to imagine today.  Many recipes though, seem surprisingly modern and can offer a simple, relaxed approach to appreciating the flavour of vegetarian food.</p>
<p><strong>“A brave, friendly, exhilarating food”</strong></p>
<p>In 1690, Thomas Tryon wrote “Wisdoms Dictates, including Bill of Fare of 75 Dishes”, a tract which called for a vegetarian diet as the only sensible way to live healthily.  His approach is all about avoiding foods difficult to digest and several of his 75 recipes don’t much stretch the imagination; Number one in the list for instance is a recipe for Bread and Water!  He can also be somewhat puritanical even when suggesting tasty sounding recipes,  such as in Currans (sic) and Oatmeal:  “You may add Butter as most good Housewives do; but I must tell them that it makes it heavy on the stomach, and apt to send fumes into the head”.</p>
<p>However, a good look through his Bill of Fare reveals an intriguing list of vegetables and herbs, that are well worth seeking out: smallage, sweet charwell, balm and colworts for example.  As for his recipes, you may wish to try “One Egg broke into a Pint of good Ale and brewed well”, but I’d have reservations about serving Spinnage (sic), Endive and young Parsley, which “cleanseth the Passages and loosens the Belly”!</p>
<p><strong>“Procure a nice square loaf…”</strong></p>
<p>Even though the recipes can seem overly simplistic to modern readers, such as the recipe for toast in “Vegetarian Cookery by a Lady”, which is one of the longest in her book.  They do also offer more creative combinations such as her Onion Pie, which is filled with a tasty mix of onions, apples and sage. </p>
<p>Many of the recipes seem carbohydrate-rich to those of us more used to a Mediterranean style of vegetarian cookery, but there are pleasant surprises such as the Italian influence in Mary Pope’s recipes of 1893 for Polenta Cutlets and Rice Polpetti.</p>
<p>As with today’s recipe books, many are laid out in chapters, and these in themselves can be illuminating &#8211; it would be pretty impossible now to imagine a whole chapter of 29 recipes devoted to “Porridge, Gruel, etc”!  Mind you, the recipes themselves are often laced with sugar, dried fruit, molasses, nutmeg and lemon juice, so they offer more tempting ideas than it might first appear.</p>
<p>The more limited range of available ingredients did encourage lively invention.  How about Beetroot Fricassee and Curried Beetroot and Cucumber for example and Mrs Bowdich writing in “New Vegetarian Dishes” in 1892, suggests Fried Beetroot as a breakfast dish!  The anonymous Lady also has a few surprises for the modern palette, with dishes like Stewed Watercress, Mushroom Tea, Fried Cucumbers and Crisped Parsley.</p>
<p>In their choice of ingredients, the writers display a spirit of using whatever is available in the land around them and not letting anything go to waste.  Hence those turnip tops and nettles, which turn up as ingredients in several books, and also making an appearance are hop tops and sorrel, a hedgerow herb often ingnored by modern retailers.</p>
<p>Our notions of sweet and savoury can be surprisingly overturned.  Savoury Semolina never turned up on the school dinner menu, and Moulded Lentils from the anonymous “Penny Vegetarian Cookery” of 1885, is actually a sweet dish!  Lentil flour is cooked with water, lemon flavouring and sugar, poured into a mould and when cold served with stewed or preserved fruit.</p>
<p><strong>“Shape as much as possible like a fowl”</strong></p>
<p>We might see it as a modern trend to create vegetarian versions of meat products like bacon and turkey-style Christmas roasts, but in fact, this seemed to be something of a trend by the end of the 19th Century.  Florence George, a cookery teacher in Birmingham, UK published “Vegetarian Cookery” in 1908, and included recipes for a stuffed Roast Chicken made from butter beans and Roast Goose made from lentils.  A woman surely well ahead of her time!</p>
<p>Mrs Bowdich also got in on the act and her book contains seven different recipes for sausages, with ingredients ranging from lentils to cabbage; Sausages in Batter and Sausages with Curry Flavour for example.  There’s also Savoury Rissoles and burger-style Lentil Cakes, made from lentils, mixed vegetables, flour, baking powder and butter, then rolled and stamped out with a pastry cutter before frying.</p>
<p><strong>“Noble Dishes of Excellent Food…”</strong></p>
<p>While heavy use is made in the majority of the recipes of eggs, cheese and milk, vegans aren’t entirely left out.  The case for excluding all animal products seems to be recognised only in terms of easy digestion, but certainly by 1908, Florence George lists such an exclusion as one of the forms of vegetarianism.  Many of the recipes are made simply with vegetables, such as Spinach with Peas and Tomatoes, or vegetables served with bread in the form of toast or crumbs, such as Herb Soup thickened with breadcrumbs.  Special efforts are made, such as an Omelet without Eggs or Butter, a mould made with macaroni, and by the turn of the 20th century vegan butter substitutes appear in the recipes, as do various brands of ‘nut meat’.</p>
<p><strong>“…Affording a good clean nourishment”</strong></p>
<p>The inspiration for these early writers appears as varied as the reasons for turning vegetarian today.  As well as those seeking a healthier, kinder diet, other titles hint at a prophetic realisation that vegetarianism offered better, cheaper nutrition for greater numbers of the population; books like Eleanor E. Orlebar’s “Food for the People” and Job Caudwell’s “Vegetarian Cookery for the Million” for example.</p>
<p>But whatever their individual reasons, it would be hard to imagine today’s explosion in vegetarian ingredients, ready meals and restaurant options without these inspirational writers.  And with our increased awareness of issues such as “food miles” and a need for more locally produced, freshly prepared food, maybe now is a good time to reconsider such “traditional” cooking and ensure we keep it as part of our repertoire.</p>
<p><strong>Rice Polpetti &#8211; Mary Pope, “Novel Dishes for Vegetarian Households”</strong></p>
<p>6oz rice</p>
<p>3oz grated wheatmeal bread</p>
<p>1 clove garlic chopped</p>
<p>1 handful of parsley chopped</p>
<p>1 tblsp lemon juice</p>
<p>1 tsp finely rubbed basil and thyme</p>
<p>Pepper and salt to taste</p>
<p>1pt water</p>
<p>3oz butter</p>
<p>Wash the rice and put it to boil with all the other ingredients except the butter.  When the rice begins to swell add the butter and cook until all the water is absorbed and the rice quite soft.  Turn out into a shallow pie dish to get cold and stiff.  Cut into slices not more than half an inch thick, and cut the slices into triangles.  Egg and crumb these and fry in hot fat.  Serve with a thick brown sauce and grated cheese in a separate dish.</p>
<p><strong>Zwiebel Sauce – Mary Pope</strong></p>
<p>Cut one large onion very fine and one tart apple; fry them in oil or butter quite brown; dredge in flour until it forms a thick paste and allow the flour to brown; thin it down with water; add salt and pepper to taste and a tablespoonful of lemon juice.</p>
<p><strong>Brussels Sprouts Sausages -  Mrs Bowdich, “New Vegetarian Dishes”</strong></p>
<p>4 oz cooked sprouts</p>
<p>2 oz mashed potatoes</p>
<p>2 oz bread crumbs</p>
<p>1 oz butter</p>
<p>1 tsp sage</p>
<p>½ tsp salt</p>
<p>½ tsp pepper</p>
<p>1 egg and bread crumbs</p>
<p>Mix the vegetables, bread crumbs and flavouring together, moisten with half the egg, form into sausages, roll in other half egg and bread crumbs, and fry in the one ounce of butter or boiling oil.</p>

<p>Take Raisins, Currans (sic) and a few Pruans (sic), boil them in good water, when near done, thicken it with White Bread, adding Spice, Sugar, Butter and Salt; This is a rich Pottage, affording a great nourishment, and therefore it must be eaten more sparingly.</p>
<p><strong>Plum Pudding – Anon “The Penny Vegetarian Cookery”</strong></p>
<p>Half a pound of flour, half a pound of currants, half a pound of grated carrots, half a pound of grated potatoes, quarter of a pound of butter and two ounces of sugar,  Mix all together, adding a little salt, and any other approved seasoning.  Boil in a buttered dish, an hour and a half, and serve with sweet sauce.  A large spoonful of treacle is an agreeable addition.</p>

			<content:encoded><![CDATA[<p></p><p>Many people have &#8220;healthy eating&#8221; as a goal, but what does that mean?  Eating healthier can mean any number of things, and usually something different to everyone.  Defining what you mean will help you achieve it.</p>

<p>As with any destination, if you are not clear about where you are going how will you know when you have arrived. Being clear about your goal helps you know what to do and when you have done it.</p>
<p> </p>
<p>Healthy eating can mean:</p>
<p><strong>eating smaller amounts/portions</strong> – Many Americans eat too much food, whether healthy foods or not.  Eating smaller amounts of foods, and therefore calories, can help many people lose weight and minimize their blood sugar and insulin swings.</p>
<p> </p>
<p><strong>eating enough food/calories</strong> – For people who have severely limited their caloric intake, for them the best thing they can do is eat more quality food.</p>
<p> </p>
<p><strong>eating often enough </strong>– This means eating frequently enough to prevent the ferocious hunger feeling that can lead to poor food choices and eating too quickly.</p>
<p> </p>
<p><strong>eating a variety of foods </strong>– Expanding your repertoire of foods gives you a bigger variety of nutrients and antioxidants.  Eating the same few foods over and over, even if they are healthy foods, limits the vitamins and nutrients your body has to work with.</p>

<p><strong>increasing fiber</strong> – Many Americans do not come close to getting the recommended 20 – 35 grams of fiber daily.  Fiber helps keep you full longer, stabilizes your blood sugar, and keeps your bowels moving regularly.  Some types of fiber can help lower LDL (the &#8220;bad&#8221; cholesterol).</p>

<p><strong>eating more antioxidants</strong> – The more variety of antioxidants you eat gives your body more to work with in running smoothly and warding off diseases.</p>

<p><strong>eating more protein</strong> – Protein is a vital building block, but also helps keep us feeling full and stabilizes our blood sugar because it is digested more slowly than carbohydrates.</p>

<p><strong>balancing the types of fats eaten </strong>–Switching to mono-unsaturated and omega 3 fatty acids are better for us than eating transfats and too many saturated fats.</p>

<p><strong>making better snack choices </strong>– Snacks are ideally 100-200 calories and provide some nutritional value.  They give us energy between regular meals.  Snacks with both fiber and protein make great choices (an apple with peanut butter, or cheese and whole grain crackers).</p>

<p><strong>pre-planning</strong> (shopping, prepping, having good choices available) – Spending the time planning meals and snacks, shopping for them, and preparing what you can in advance goes a long way to making those foods more appealing once you are tired and hungry. Simply having them available increases your chances of eating them.</p>

<p><strong>paying attention to how you eat</strong> &#8211; Sitting down, eating slowly and enjoying your food can help you eat less and feel more satisfied.  Eating should be a pleasant experience.</p>

<p><strong>noticing why you eat</strong> – Ideally you should eat only when you are hungry.  This means eliminating emotional and habitual eating.  Think about whether you are really hungry before you reach for the chips when settling into your favorite TV chair, or munch when a deadline is looming.</p>

The constant struggle of thinking and doing everything we can so that we will be sure that we are doing and giving only the best things that our kids deserve have been in our minds. And one of the best things we can do for them is teaching them how to eat healthy and making it a habit.</p>
<p>It is also a motivation for us to think that our kids really like to look up to us, so when we show them that we are eating healthy then they too will more likely have the same healthy habits. Although it will always be a survival of the fittest, teaching the kids to eat healthy, the product will be more than a reward for us when it comes.</p>
<p>Below are just five of the tips you can always consider when the going gets tough with our venture on teaching our kids healthy eating. Try some or even all of them and see the fruits of your labor.</p>
<p>Teach them on how to eat veggies without making them realize that they have actually done it. You know, a little trick will do. Nutritionists are saying that for our kids to eat something new we have to let them see the food some 4 or 5 times. Do not be disheartened when they chose to ignore a vegetable during dinner. Instead let them meet the same veggie within the week.  Make sure also that the veggie you will offer them taste good—firmness and not mushy is the key. Splash them up with olive oil or even grated cheese. And the best trick of them all is to let them see how Mom and Dad are actually enjoying the veggies themselves.</p>
<p>Allow them to help you in preparing the meals of the family. You can also take them to the groceries and give them the liberty of choosing the foods and tell them that they also make the menu for that dinner. Giving them a sense of responsibility will do the second trick here. And finally, let them fix the table and serve what they had prepared. The feeling of independence will be something new and good for them that they might ask to do the process again.</p>
<p>Get them to eat more fruits too. Well, at first it would be like pulling teeth, but if you can make the fruits more fun and appealing, they will surely love what they will see. Make fruit shakes or smoothies for them. You can also try freezing fruits and make them ice cream and lollipops. Without the kids knowing it, they are actually having more than their share of fruits.</p>
<p>If your kids view mealtimes as something that distracts them for their playing, then make every meal as relevant to their interests as possible. Talking &#8220;sense&#8221; to them will also help; tell them that after eating they will get to play anything they like, or stories that Superman actually eats and loves broccoli and it makes him stronger and ready to fight the bad guys. Now, who wouldn&#8217;t want to do something like Superman do?</p>
<p>Finally, join in the fun. Sit down with them at the dining table and eat like all normal families do. This is indeed proven the first effective way of teaching the kids healthy eating. By doing all the things at the same time and making it a routine, you kids will be more than motivated and it will ensure you that they are indeed eating and not just feeding the dogs their own food. </p>
<p>It is important to note, however, that eating healthy and making it a habit for the kids does not in any way mean that they have to be bulky and overweight. It is only ensuring that they don&#8217;t grow up making the wrong food choices that they can longer turn their backs about.</p>
