While not completely vegetarian, all of the Moosewood restaurant cookbooks have some vegan recipes and I have never made something out of the books that I didn’t like.
Whatever you find, use only as a guideline for ideas. The BEST food you can personally make is food you create for yourself based on your personal likes and dislikes. Browse the internet for ideas regarding spices to go with, maybe, but create and be the artist. I do have one that is pretty good, “the best-ever VEGETARIAN cookbook” by linda fraser, over 200 recipes, illustrated step-by-step.
My favorite just came out about a week ago. It’s called “Veganimicon: The Ultimate Vegan Cookbook”, and they aren’t lying. This thing looks and feels like a textbook. It is filled with hundreds of amazing recipes and extra tips and tricks. Everything I’ve had from it so far has been amazing.
My absolute favorite is Vegan with a Vengeance by Isa Chandra Moskowitz because most of the recipes are super simple and relatively cheap. A close second is Vegan Vittles (Stepaniak). Happy eating!
Vegan Planet…it is awesome and huge and contains a whole lot of amazing recipes. I use it at least three times a week!

I’m totally on the Moskowitz bandwagon. “Vegan with a Vengeance” is my favorite cookbook EVER. And although I haven’t tried anything out of “Veganomicon” yet (because I just got it) I have flagged an insane number of things I want to try. Plus… if you have a sweet tooth, you can pick up “Vegan Cupcakes Take Over the World” (mmm… margarita cupcakes!)
“How It All Vegan” by Sarah Kramer and Tanya Bernard is a good one, too. Lots of “little” recipes like faux parmesan topping and yummy salad dressing and stuff.
